No dinner tonight. We ate a really late lunch and if anyone gets hungry they can fend for themselves.
The kitchen has been busy today, though. Even though I am a stay at home mom, I spend my weekends making food to get us through the week. Some of the things I make:
~ Grilled chicken - I almost always have grilled chicken in the refrigerator. I can toss it on a salad, into a quesadilla, add it to broth and vegetables for a quick soup, use it in a panini, etc.
~ Brown rice - Compared to white rice, brown rice takes forever to cook when you are hungry. I make a double batch (or triple, depending what I have planned for the week) and keep it in the refrigerator. Alton Brown's recipe is the easiest there is.
~ Grains - I often have a grain prepared in the refrigerator. Some recent favorites are barley pilaf, tabouli and quinoa and black beans.
~ Beans - We eat a lot of beans and our freezer stockpile usually needs to be restocked by the weekend.
~ Lunch - Homemade refried beans, burrito filling, soup, homemade mac and cheese... just some of the lunch items I make on the weekend so the boys can just grab and go throughout the week.
Having food ready to go means that I can get something on the table in less than 15 minutes if I need to. Less time than it would take to have a pizza delivered or pick up takeout.
Do you cook ahead on the weekends?

I try to do that too-at least in my lunch fare for the week-since I have allergies to deal with and hubby frequently wants the taco-tamale pie or spaghetti,I like to have something on hand for me where I don't have to make 2 meals at once very often.Right now I have a few containers of chicken soup that I can add noodles or rice to....
